The genuine Nancy Macaroon owes its renown to the secret recipe of two ’Soeurs Converses’ (lay sisters) from the Dames du Saint Sacrement community in Nancy.

This authentic recipe has been the subject, for four centuries, of constant research by the pastry chefs, cooks and confectioners of Nancy, but still remains unequalled today. This secret is currently kept by Nicolas Génot of La Maison des Soeurs Macarons.

This delicious sweet delicacy is made solely from a mixture of egg whites, sugar and Provence almonds, making it a macaroon faithful to tradition.
